New recipe #7

Plum-glazed Pork With Snow Peas

Right, this is simple as pie and I'm a little ashamed I didn't already have something like this in my repertoire but I've never really been a fan of plum until recently.

1 tbsp vegetable oil
1 brown onion, sliced
3 x 250g pork fillets, trimmed and sliced
1 tsp grated ginger
1 clove garlic, crushed
1/4 cup (60ml) chicken stock
1/3 cup plum jam
1 tbsp soy sauce
1/4 tsp Chinese five-spice powder
200g snow peas, trimmed and halved
steamed rice, to serve

Heat the oil in a wok or large non-stick frypan over high heat. Place the onion in the pan and cook for 2 minutes. Add the pork and cook in batches for 3 minutes. Remove the onion and pork and set aside.

Add the ginger, garlic, stock, jam, soy and five-spice to the pan and cook, stirring, for 1-2 minutes or until the jam is melted. Return the pork and onion to the pan, add the snow peas and cook for 1 minute or until the snow peas are tender.

Serve with steamed rice.

Verdict: Five out of five, it's a new favourite. A lovely flavour and it's made in minutes, perfect!

Make this, expand your horizons. It's no quarter pounder, but it's pretty good.

Well, you shouldn't cook with microwaves, that's your problem. They're for reheating leftovers and warming milk, that's all.
