In which there's more dessert





Rich Truffle Mud Cake

6 eggs
½ cup (110g) firmly packed brown sugar
400g dark eating chocolate, melted
1 cup (250ml) thick cream (48% fat content)
⅓ cup (80ml) orange-flavoured liqueur

Preheat oven to 160° fan-forced. Grease deep 22cm-round cake pan; line base and side with baking paper.

Beat eggs and sugar in a large bowl with electric mixer until thick and creamy. With motor operating, gradually beat in barely warm melted chocolate until combined. Using metal spoon, gently fold in combined cream and liqueur.

Pour mixture into pan. Place pan in baking dish; pour enough boiling water into dish to come halfway up side of pan. Bake about 30 minutes. Cover pan loosely with foil; bake another 30 minutes. Discard foil; remove pan from dish, cool cake in pan.

Turn cake onto serving plate, cover, refrigerate overnight.


Verdict

Four-out-of-five. It's there in the name, this baby is rich. Everybody loved this, although a couple people said they could really taste the alcohol (I used Cointreau) which amazed me because 1) I used a nip bottle, so I actually used 30ml less than suggested) and 2) I could taste the orange flavour but not the alcohol itself, and I'm the sort of person who actively avoids putting alcohol in anything if there's even the slightest chance I'll be able to taste it because it generally just doesn't do anything for me. So I guess tastes will vary?

UNF cake. GET IN ME.

I am a bit wary of very rich foods, seeing as I have a pathetically delicate stomach (to my great shame), but it does look bloody delicious, so I might make it anyway.

Maybe the people who said they could taste the alcohol actually meant they could taste the cointreau, like you? Seeing as it's being baked, there wouldn't be any alcohol left in it to taste.

Yeah, don't like alcohol in cake too much either. it sort of destroys the taste for me. but as you said tastes vary.
